Mash the banana to a pulp with a fork. Mix all ingredients except for the oil well with the whisk.
Heat some coconut oil in a frying pan, add small portions of dough to the hot fat and bake until golden brown on both sides.
The dough is a good base and pieces of apple, nuts, chocolate chips or berries can easily be added as desired.
Almond milk can also be replaced with other plant-based milks. Coconut oil with other vegetable fats. Agave syrup can also be replaced with honey or sugar, but with honey the pancakes are no longer vegan.
