  1. Slice the aubergines lengthways and fry on both sides. Let rest on kitchen paper and covered with kitchen paper for 3-4 hours (to soak up).
  2. Mix the remaining ingredients, spread them on the aubergines and roll them up.
  3. This recipe goes well with summer buffets, salads, steaks, antipasti or as a starter with ciabatta.
