- Wash and dry the aubergines and cut lengthways into 12 slices. Do not use the outsides. Gradually fry the slices in olive oil and season with salt.
- Let the fried slices cool down on a plate.
- Cover the aubergine slices with a cut slice of ham and cheese, roll up and place in an ovenproof dish.
- Preheat the oven to 240 degrees (convection not recommended) and bake the rolls in it for about 15 minutes.
- Take the mold out of the oven, pour off the spilled liquid.
- Sprinkle the parmesan on the rolls and bake in the oven for about 5 minutes.
- You can also serve the rolls with, for example, risotto as a delicious dinner.
