Ingredients

  • 2 eggplant (s), approx. 15 cm long
  • 12 slices ham, cooked
  • 12 slices cheese, Fontina or Emmentaler
  • salt
  • 6 tablespoon olive oil
  • 20 g parmesan, freshly rated

Eggplant Rolls with Ham and Cheese

Instructions

  1. Wash and dry the aubergines and cut lengthways into 12 slices. Do not use the outsides. Gradually fry the slices in olive oil and season with salt.
  2. Let the fried slices cool down on a plate.
  3. Cover the aubergine slices with a cut slice of ham and cheese, roll up and place in an ovenproof dish.
  4. Preheat the oven to 240 degrees (convection not recommended) and bake the rolls in it for about 15 minutes.
  5. Take the mold out of the oven, pour off the spilled liquid.
  6. Sprinkle the parmesan on the rolls and bake in the oven for about 5 minutes.
  7. You can also serve the rolls with, for example, risotto as a delicious dinner.
  8. Then the recipe is enough for 4 people.
