Peel and halve hard-boiled eggs. Separate the raw egg. Knead the boiled egg yolks with the raw egg yolks, salt, pepper, mustard, butter and herbs. Fill into the halves of the egg, place the cut surface in the whisked egg white, then press into the breadcrumbs. Fry them in the heated clarified butter until crispy and serve with a salad. Tip: Also add small cubes of cooked ham. Replace breadcrumbs with grated toast, it is looser and tastes better.
