Instructions

  1. Rest time: 12 hours
  2. Total time: 12 hours 40 minutes
  3. Put the plucked elderberry in a saucepan with the preserving sugar.
  4. Wash the orange and rub dry. Rub the peel and add half of the peel to the elderberry sugar mixture. Keep the rest in a bowl.
  5. Squeeze the orange and add the juice to the saucepan as well. Stir everything and let it steep for about 12 hours (preferably overnight).
  6. The next day, peel the apples, prepare them, cut them into small cubes and add them to the elderberry.
  7. Bring the jam to the boil and simmer gently for about 10 minutes. Then turn through the brisk Lotte and bring to the boil again briefly. Make a gelling test and season to taste. If you like, you can now add the rest of the orange peel.
  8. When the jam has gelatinized, pour it boiling hot into the prepared Twist Off jars, close immediately and turn around for about 2 minutes so that a vacuum is created.
  9. This is a very nice fruity variant of elderberry jam. The orange can also be left out and replaced with cinnamon. But we like it better with orange.
