- Peel the waxy potatoes and grate them finely. Squeeze out the potato mixture with your hands and mix with the egg, quark, salt and flour.
- If the grated potatoes turn a little brown, that`s not a problem, they turn yellow again when frying.
- Heat clarified butter in a pan.
- Using a small scoop or tablespoon, add the potato mixture to the pan in portions. It should be small circles with a diameter of approx. 6-8 cm.
- The excavators are turned when they are nice and light brown. Please turn only once, otherwise they will come apart.
- Remove from the pan and place on a kitchen towel so that the excess fat can be soaked up.
- Baggers can be eaten with goulash, applesauce and with cinnamon and sugar.
