Ingredients

  • 1 kg potato (s), waxy
  • 1 large egg (s)
  • 1 tablespoon quark
  • a bit salt
  • 1 tablespoon flour
  • clarified butter

Instructions

  1. Peel the waxy potatoes and grate them finely. Squeeze out the potato mixture with your hands and mix with the egg, quark, salt and flour.
  2. If the grated potatoes turn a little brown, that`s not a problem, they turn yellow again when frying.
  3. Heat clarified butter in a pan.
  4. Using a small scoop or tablespoon, add the potato mixture to the pan in portions. It should be small circles with a diameter of approx. 6-8 cm.
  5. The excavators are turned when they are nice and light brown. Please turn only once, otherwise they will come apart.
  6. Remove from the pan and place on a kitchen towel so that the excess fat can be soaked up.
  7. Baggers can be eaten with goulash, applesauce and with cinnamon and sugar.
