Instructions

  1. Prepare poultry meat or vegetable broth beforehand (better) or use instant broth.
  2. Cut the sweet potatoes into smaller pieces. Put tomatoes in boiling water until skin flakes, peel them under cold water.
  3. Add the potatoes, tomatoes with a little ginger, chilli peppers and garlic clove to the broth and cook for about 20 minutes.
  4. Puree with a hand blender (remove the chilli pepper and garlic beforehand, if necessary).
  5. Add coconut milk and peanut cream. Add some curry paste and soy sauce depending on your taste. The soup should be slightly creamy; add some water if necessary. If the soup is a little too sweet, a little crème fraîche can be added if necessary. The soup should be slightly spicy, or hotter depending on your preference.
  6. Garnish with parsley to serve.
