- Prepare falafel balls according to the instructions on the packet.
- Wash and chop the parsley. Peel the shallot and cut into small cubes. Wash and chop tomatoes.
- Put parsley, onions and tomatoes in a bowl. Stretch with leaf spinach or lamb`s lettuce, depending on how strong you want the parsley flavor.
- For the dressing, mix the tahini with a little milk and a dash of the olive liquid (from the glass). Season to taste with salt and pepper
- Spread the dressing, olives and falafel balls on top of the salad. Top with a little humus (optionally homemade)!
