Cook the pasta 1-2 minutes shorter than according to the package instructions and drain. Cut the dried tomatoes into fine strips. Wash and drain the rocket. Mix the warm pasta with the tomatoes, add about 2 tablespoons of balsamic vinegar and 2 tablespoons of olive oil, as well as a splash of lemon juice for a fresh taste. Season to taste with salt, pepper and herbs (e.g. basil or chives, according to taste).
Mix in the rocket just before serving. The noodles should have cooled down by then. Finally, garnish with some freshly grated Parmesan.
