- Brush off the mushrooms, unscrew the stem and chop it into small pieces.
- Mash the gorgonzola with a fork or strain it through a sieve. Mix this with the mascarpone, plenty of black pepper and the chopped mushroom stalks.
- Now spread the mixture into the mushrooms. Put this in a buttered casserole dish and bake at about 180 degrees for about 15 minutes.
- Tip: You can also cook them on the grill on oiled aluminum foil at moderate heat.
