- Cook the noodles in salted water until they are firm to the bite, drain well and allow to cool
- Mix the red wine vinegar with salt and pepper and fold in the olive oil. Chop the basil and add to the liquid.
- Clean, wash and cut the tomatoes into wedges or cubes. Drain and dice the mozzarella.
- Mix the pasta, tomatoes, mozzarella and the dressing well and let it steep for about 1 hour.
- Now roast the pine nuts in a dry pan until golden brown and add to the salad before serving. Season again with salt and pepper before serving.
- Tip: If you want, you can mix whole basil leaves into the salad as a decoration.
