Ingredients

  • 250 g pasta (e.. penne or similar)
  • salt
  • 4 tablespoon vinegar (red wine vinegar)
  • Pepper, whiter
  • 60 ml olive oil
  • basil, fresher (also frozen)
  • 3 medium tomato (s)
  • 1 ½ cup mozzarella (small balls, e.g. from Santa Lucia)
  • 35 g pine nuts

Instructions

  1. Cook the noodles in salted water until they are firm to the bite, drain well and allow to cool
  2. Mix the red wine vinegar with salt and pepper and fold in the olive oil. Chop the basil and add to the liquid.
  3. Clean, wash and cut the tomatoes into wedges or cubes. Drain and dice the mozzarella.
  4. Mix the pasta, tomatoes, mozzarella and the dressing well and let it steep for about 1 hour.
  5. Now roast the pine nuts in a dry pan until golden brown and add to the salad before serving. Season again with salt and pepper before serving.
  6. Tip: If you want, you can mix whole basil leaves into the salad as a decoration.
