Wash the fennel and remove the stalk. Cut into thin slices and place in a salad bowl. Pour plenty of good olive oil over them and season with a little salt and freshly ground pepper. Finally, generously grate the parmesan in one piece. It goes very quickly and tastes fantastic, especially when the ingredients are fresh (especially do not use packaged Parmesan!). Suitable as a starter, with fish or simply for in between.
