Cut the fennel bulbs into very fine strips. Chop the fresh greens and set aside.
Heat olive oil in a pan. Fry the fennel strips at a high temperature for approx. 5 min.
Add the vegetable onion cut in half rings and chopped garlic. Season to taste with salt, pepper and a tablespoon of sugar. The fennel should be golden yellow and still al dente.
Sprinkle the fresh fennel green on top before serving.
