Dice the peppers. Chop the onion and sweat it in a little olive oil.
Pour 2/3 of the wine and cream, add the chilli and herbs and simmer for about 25 minutes. Then process everything well with a hand blender (there may still be a few small pieces of paprika inside).
Add the rest of the wine and cream and simmer for another 10 minutes. Possibly dilute with a little cream or thicken with a little flour everyone likes a sauce in a different consistency.
