Clean the figs, cut eighths and mix them with the preserving sugar. Cook in a saucepan over medium for approx. 30 minutes until soft. Grind the mustard seeds in a mortar or grind them finely in a grinder (coffee grinder). Add all specified ingredients and finely puree the mixture in a mixer (or similar). Season with salt and pour the mustard into clean, sterilized twist-off jars. Place the jars on a damp cloth and close tightly immediately after filling.
The indicated amount makes approx. 5-6 glasses of wonderful fig mustard.
