Instructions

  1. Take the fillets out of the refrigerator in good time and let them reach room temperature.
  2. Heat the butter in a pan over medium heat. Put in the fillets and fry for 4 minutes on each side (medium-rare).
  3. Place the fillets on plates and sprinkle with salt and pepper to taste.
  4. Add the beef broth, cognac and rosemary to the pan and simmer until it is reduced to approx. 80 ml. It takes about 5 minutes.
  5. Pour the sauce from the pan over the fillets and spread the blue cheese on top. Serve.
  6. French fries or mashed potatoes and green beans or peas go well with it.
