- Take the fillets out of the refrigerator in good time and let them reach room temperature.
- Heat the butter in a pan over medium heat. Put in the fillets and fry for 4 minutes on each side (medium-rare).
- Place the fillets on plates and sprinkle with salt and pepper to taste.
- Add the beef broth, cognac and rosemary to the pan and simmer until it is reduced to approx. 80 ml. It takes about 5 minutes.
- Pour the sauce from the pan over the fillets and spread the blue cheese on top. Serve.
- French fries or mashed potatoes and green beans or peas go well with it.
