Roll out the toast flat with the rolling pin. Cut out circles with a slightly larger glass and carefully place them in a muffin tin (you have to try the size of the glass). Bake in the preheated oven for approx. 10-15 minutes until crispy.
Let cool down.
Chop the mozzarella, tomato and basil and mix. Season to taste with pepper and salt. Fill into the baskets just before serving to avoid soaking through. Drizzle some olive oil over it and sprinkle with cress or more basil.

The baskets can be filled with a wide variety of fillings according to your own taste.
