Bring the milk to the boil and stir in the rice pudding. Remove from the stove and let soak for 10 minutes. Mix the quark with the eggs, ginger, 40 g desiccated coconut, the finely chopped peaches, vanilla sugar and sugar and then mix everything with the rice pudding.
Put in a greased baking dish and bake at 200 degrees (180 degrees fan-assisted air) for 30 minutes in the preheated oven. Sprinkle with the remaining desiccated coconut before serving.
