Make a smooth dough from the first 5 ingredients (knead). Then divide into flat, oval flatbreads (approx. 10 x 5 cm) and place on a baking sheet.
For the filling, mix the cottage cheese, eggs, 200g Gouda cheese, leek, salt + pepper.
Bake the flatbreads in the preheated oven at 225 degrees for 10 minutes on the middle rack. Then place the filling in the middle of the dough. Partly also top with diced paprika or zucchini, bake for another 30 minutes at 200 °.
1 serving is for 1-2 baking trays, depending on how thick the dough is laid out.
