Finnish salad "Rosoli (Rassole)" is very similar to our herring under a fur coat, only it is not prepared in layers. Our favorite vegetables and herring are cut into cubes and seasoned with mayonnaise. I really like this version of the salad for its simplicity of preparation.

Instructions

  1. Boil beets , potatoes, eggs and carrots until tender. Everything is cooked one at a time, because the cooking time is different.
    Cool and peel boiled vegetables and eggs.

  2. Chop the red onion finely and cover with cold water, leave to release the bitterness.
  3. Cut the eggs into small cubes (I did this with a special device).
  4. Cut the carrots into small cubes too.
  5. The potatoes can be cut into larger cubes.
  6. Cut the beets into cubes proportional to the potato slices.
  7. Cut the pickled cucumbers into small cubes.
  8. Place vegetables and eggs in a bowl. Add the diced herring there.
  9. The last thing to do is peel and dice the apple (if using).
  10. Add the apple to the Finnish salad "Brine (Rosoli)" with vegetables and herring. Season the brine with mayonnaise and mix well.
