- Wash and dab the redfish fillets and cut lengthways into two pieces. Place the plucked rosemary on half of these fillets. Fold the fillets together.
- Halve the Serrano ham lengthways (or a whole slice, depending on the size). Wrap the ham around the folded fish fillets and secure with toothpicks.
- Heat the olive oil in a non-stick pan and fry the involtini on both sides. Salt and pepper as needed. A tomato risotto goes well with it.
