Ingredients

  • 4 redfish fillet (s), boneless
  • 2 sprigs rosemary
  • 4 slices ham (Serrano ham)
  • some salt and pepper
  • 1 tablespoon olive oil

Instructions

  1. Wash and dab the redfish fillets and cut lengthways into two pieces. Place the plucked rosemary on half of these fillets. Fold the fillets together.
  2. Halve the Serrano ham lengthways (or a whole slice, depending on the size). Wrap the ham around the folded fish fillets and secure with toothpicks.
  3. Heat the olive oil in a non-stick pan and fry the involtini on both sides. Salt and pepper as needed. A tomato risotto goes well with it.
