Peel and squeeze the garlic or chop very little, put in a bowl and add the herbs of Provence, salt and olive oil and let it steep for a few minutes. Now rub the fish fillets on both sides with the herb paste and wrap a single layer in baking paper.
Heat the sunflower oil in a pan and add the wrapped fillets to the pan and fry for a few minutes on each side. Remove from the pan, wrap out of the baking paper and arrange on a plate.
I usually have boiled potatoes with melted butter and vegetables with it.
