Mix the warm water with yeast, salt, 1 tablespoon of pizza seasoning, 4 tablespoons of olive oil, vinegar and sugar. Quarter half of the olives, halve the other half and add. Then add the flour and knead everything well. Cover the dough with a clean kitchen towel and let it rise twice in the warmth for an hour.
Form two flat cakes and leave to rise covered for another 30 minutes. Meanwhile preheat the oven to 200 degrees.
Mix 2 tablespoons of olive oil with the herb salt. Now press small hollows in the risen dough with your finger and brush the flatbreads with the oil-salt mixture and sprinkle with a little pizza spice. Bake the bread for 20 minutes, then turn it over and bake for another 5-10 minutes.
