Ingredients
Flour – 150 Grams
Butter – 75 Grams
Egg yolk – 4 Pieces (2 yolks – for dough and 2 – for cream)
Lemon – 1 Piece (only the zest is needed, you can replace it with an orange)
Sugar – 2 Tbsp. spoons (1 tbsp – for dough, 1 – for cream)
Preheat the oven to 180 °C (355 °F). In a large bowl, rub 75 g cold butter into 150 g sifted flour with your fingertips until crumbly.
Add 2 egg yolks, 1 tbsp sugar, and the zest of half a lemon. Mix with a stand mixer on low, then bring together by hand into a smooth dough. Do not overwork.
Press the dough evenly over the bottom and sides of a non-stick or silicone tart pan. Prick all over with a fork so it does not puff during baking.
Blind-bake the tart shell for 10 min, until set but still pale. Remove and leave the oven on.
Peel and core 2–3 apples. Cut each into 8 wedges, then cut each wedge into 2–3 pieces.
Arrange the apple pieces over the base in a tight fan pattern, starting from the centre and spiralling outward until the base is fully covered.
In a bowl, whisk together 2 egg yolks, 1 tbsp sugar, the zest of the remaining half lemon, 0.5 tsp cinnamon, and 2 tbsp fat cream until smooth.
Pour the cream mixture evenly over the apples, making sure it reaches the corners.
Bake for 30 min, until the custard is set and the top is golden. Keep the oven on.
Brush the finished pie with a little melted butter, dust with icing sugar, and return to the oven for 5 min, until the sugar caramelizes into a glossy top. Cool briefly before serving.
