Instructions

  1. Heat the butter in a saucepan, sweat the leek and shallot in it, add the flour and roast lightly (but should remain light) while stirring with a whisk and slowly add the cold stock.
  2. Let it cook a little so that the flour taste disappears. Add the cream and season with salt and pepper.
  3. Arrange in soup plates, sprinkle with chives and the croutons.
