Dice spring onions, radishes, eggs, potatoes and meat sausage and place in a larger soup tureen. Top up with the buttermilk and mineral water. Chop garden herbs (depending on what the garden has to offer, e.g. cress, parsley, chives) and add them. Season everything vigorously with salt and pepper and stir. Serve after two hours in the refrigerator with fresh baguette.
On hot summer days, this refreshing cold soup made from a Russian house recipe is a great alternative to salad. Light, low in calories and just something completely different.
