Wash the spinach thoroughly in plenty of water, drain, remove the stalks and cut the leaves into strips approx. 1 - 1 1/2 cm wide.
In a large saucepan, sauté the chopped shallots in oil until translucent. Add the spinach and let it collapse while stirring. Only when you have seen the final amount do salt, pepper and add the cream.
My son-in-law said he has never had spinach this tasty.
