Peel the asparagus and cut into pieces about 4 cm long, cut off the green asparagus about 3 cm at the bottom. Thick bars can still be cut in half.
Heat the butter in a pan and lightly caramelize with the sugar. If you want spiciness, add the chilli now.
Add the asparagus and the diced ham or shrimp and fry, stirring constantly. When the asparagus is done, add the lemon juice and a little salt.
The pre-cooked ribbon noodles can now be mixed with the asparagus and heated if necessary. The addition of 2 tablespoons of walnut oil is particularly recommended.
If you leave out the shrimp or the ham cubes, the dish is vegetarian.
