Instructions

  1. Cut the vanilla pod lengthways and scrape out the pulp with a sharp knife. Peel the bananas and cut in half lengthways.
  2. Heat the butter, maple syrup and vanilla pulp in a pan and caramelize until light brown. Carefully turn the banana halves in the caramel. Pour in the orange and lemon juice and possibly rum and bring to the boil briefly.
  3. Take the bananas out of the pan, place them on plates and serve with a scoop of vanilla ice cream each. Pour the pan sauce over it and serve immediately.
