Instructions

  1. Cut the leek into rings and wash. Heat the butter and fry the leeks over low heat until soft.
  2. In another pan, fry the black pudding slices on both sides until crispy. Take out and keep warm.
  3. Fry 4 fried eggs in the remaining fat.
  4. Arrange the black pudding on preheated plates. Pour the leek on top and cover with a fried egg. Salt and pepper.
