- Cut the leek into rings and wash. Heat the butter and fry the leeks over low heat until soft.
- In another pan, fry the black pudding slices on both sides until crispy. Take out and keep warm.
- Fry 4 fried eggs in the remaining fat.
- Arrange the black pudding on preheated plates. Pour the leek on top and cover with a fried egg. Salt and pepper.
