Wash the cauliflower and cut into small florets. Cut into small pieces with the food processor. Not for too long, it shouldn`t be puree, but rather have a consistency between rice and couscous.
Fry the raw cauliflower with oil in a pan for about 20 minutes, it should be lightly browned. Incidentally, roast the cashew nuts in a pan without fat. Towards the end of the roasting time, salt and pepper and add the Ras el Hanout as well as the cashew nuts and cranberries.
Goes well with dark meat, but is also a super tasty vegan main course.
