- Clean the chanterelles dry and chop them roughly.
- Fry the bacon cubes in a pan until crispy, sweat the onion cubes in them until translucent. Add the chanterelles and let them roast briefly.
- Whisk the eggs well, season with the parsley, salt, pepper and paprika, add to the mushroom pan and let set while stirring.
- Depending on your wishes, boiled potatoes or bread dumplings (very tasty) can also be fried. Then it becomes a real mushroom roast.
