- Dice the chicken breast or cut into strips. Cut the garlic cloves and chilli into thin slices and the kaffir lime leaves into thin strips.
- Carefully roast the cashew nuts until brown in a pan (do not add any oil) and put away.
- Heat the oil in a wok. Fry the chicken a little, then add the garlic and stir-fry. Once the meat has turned color, curry paste,
- Put the fish sauce, water, sugar and 1 chopped chilli into the wok. Stir for about 1 minute over high heat.
- Add kaffir lime leaves and roasted cashew nuts and stir for another 2 minutes.
- Garnish with basil and chili slices.
- Side dish: Thai, basmati or jasmine rice.
