Ingredients

  • 400 g chicken breast
  • 3 tablespoon oil, (peanut oil)
  • 2 cloves garlic
  • 2 tablespoon fish sauce
  • 2 tablespoon curry paste, red
  • 2 tablespoon sugar, brown
  • 2 chilli pepper (s), red
  • 80 ml water
  • 4 kaffir lime leaves
  • 3 sprigs basil
  • 150 g cashew nuts, unsalted

Instructions

  1. Dice the chicken breast or cut into strips. Cut the garlic cloves and chilli into thin slices and the kaffir lime leaves into thin strips.
  2. Carefully roast the cashew nuts until brown in a pan (do not add any oil) and put away.
  3. Heat the oil in a wok. Fry the chicken a little, then add the garlic and stir-fry. Once the meat has turned color, curry paste,
  4. Put the fish sauce, water, sugar and 1 chopped chilli into the wok. Stir for about 1 minute over high heat.
  5. Add kaffir lime leaves and roasted cashew nuts and stir for another 2 minutes.
  6. Garnish with basil and chili slices.
  7. Side dish: Thai, basmati or jasmine rice.
