Put the eggs in a medium bowl, add the parsley, vegeta and nutmeg and whisk everything together. Then add the meat loaf and knead everything well, gradually adding the breadcrumbs until a medium-firm dough is formed. It can`t be too tight.
In the meantime, bring the water to the boil and add the beef stock powder. When it boils, use a teaspoon to cut off the dumplings. Simmer on medium heat for about 20 minutes.
Garnish with a little parsley in the plate and serve hot.
