Halve the avocado, remove the stone, lift the pulp out of the skin, first cut into wedges and then into bite-sized pieces. Wash the tomatoes, dry them, cut them into slices, removing the stems.
Fry the bacon in a pan until crispy and remove it from the pan. Add a little clarified butter to the bacon, crack open the eggs and let them slide carefully into the fat. Fry over low heat until the egg whites have set.
Top the bread with bacon, avocado and tomato. Season with salt and pepper. Put the fried egg on top and season too. Serve garnished with cress.
