Pour boiling water over the pasta and let it steep for 5 minutes. Clean and cut the vegetables. Cut the chicken into strips and fry in hot oil in a wok. Squeeze the garlic clove and fry it. Take out the meat.
Sear the vegetables al dente: First add the carrot, then the leek and spring onions and finally the mung bean sprouts. Season the vegetables with salt, pepper, paprika and the spice mixture. Put the noodles and the meat in the wok and fry them.
Mix the sesame oil, soy sauce and vegetable stock to taste and add as desired. Whisk the egg and pour over it. Mix together, continue frying briefly.
