Wash and brush the potatoes thoroughly, then cook with the skin in a little salted water for about 15 minutes (depending on the variety). Drain the potatoes, leave to cool and cut lengthways in the middle. Immediately add a little salt and pepper.
Heat the lard in a large pan. Place the potatoes in the pan, cut side down, and fry for about 3 minutes. Add the pressed garlic and herbs, who also likes some chilli. Turn the stove back to medium heat. Fry the potatoes for another 5 minutes, swirling several times.
Remove the herbs and garlic and serve the potatoes immediately (preferably in the pan). When serving, a little extra virgin olive oil can be drizzled on the potatoes.
