Rinse the trout inside and out with cold water and pat dry. Mix the flour with the paprika and cheese. Turn the fish in it and also sprinkle it inside.
Melt the butter in the pan and fry the trout over medium heat for 5 to 8 minutes on each side. Lift the fried trout out of the pan and place on a preheated plate.
Roast the almonds in the clarified butter until light brown and sprinkle on the trout.
