Clean the zucchini and quarter lengthways. Cut the quarters diagonally into diamonds.
Mix these with olive oil, thyme (coarsely broken open) and garlic and fry in a pan until they have formed roasted aromas, i.e. are lightly browned. Now season with salt and pepper and serve warm as a side dish or in a variation with aubergine and paprika as a starter.
Fried zucchini is just as tasty when marinated overnight and served cold.
