Instructions

  1. Chop the sucuk and onions and fry in a non-stick pan over medium heat until the onions are translucent.
  2. In the meantime, cut the tomato in half, cut out the stalk in a wedge shape and cut the tomato into 1 cm cubes. If you want the tomato without skin, briefly put it in boiling water before chopping it up and then peel off the skin. Also cut the sheep`s cheese into 1 cm cubes.
  3. Season the eggs in a bowl with salt, pepper and oregano, whisk well and stir in ¾ of the finely chopped chives.
  4. Add the tomatoes to the sucuk and onions and sauté briefly. Add the eggs, let them set a little, then sprinkle the sheep cheese over them and leave everything on the stove with the plate switched off until the eggs are completely set.
  5. Distribute on plates and sprinkle with the remaining chives. Serve with fresh rolls.
