- 1 sausage, (sucuk, Turkish garlic sausage)
- 1 tomato (s)
- 0.5 ½ bunch chives
- 1 onion (s)
- 1 g oreano
- 50 g sheep cheese
- 3 egg (s)
- Salt and pepper, from the mill

- Chop the sucuk and onions and fry in a non-stick pan over medium heat until the onions are translucent.
- In the meantime, cut the tomato in half, cut out the stalk in a wedge shape and cut the tomato into 1 cm cubes. If you want the tomato without skin, briefly put it in boiling water before chopping it up and then peel off the skin. Also cut the sheep`s cheese into 1 cm cubes.
- Season the eggs in a bowl with salt, pepper and oregano, whisk well and stir in ¾ of the finely chopped chives.
- Add the tomatoes to the sucuk and onions and sauté briefly. Add the eggs, let them set a little, then sprinkle the sheep cheese over them and leave everything on the stove with the plate switched off until the eggs are completely set.
- Distribute on plates and sprinkle with the remaining chives. Serve with fresh rolls.
