Drain the apricots and cut into small pieces. Put a few pieces of it and some nice berries of the berry mixture aside. Mix the remaining berries with honey and lemon juice.
Mix the vanilla yoghurt with low-fat quark and sugar until smooth. Layer alternately in four dessert glasses yoghurt cream, apricots and the marinated berries. Finish with the apricots and berries set aside. Scatter oatmeal on top and serve garnished with mint if you like.
