Prepare the rice according to the instructions on the packet.
Cut the meat into strips. Wash, divide and cut the peppers into strips. Drain the apricot halves on a sieve, collecting the juice. Thirds the drained apricots.
Fry the pepper strips in a little oil. Mix the collected apricot juice with the soy sauce, vinegar, sugar, a little salt, pepper, curry and sambal oelek, add and bring the sauce to the boil.
Pepper the meat and dust with paprika and curry. Fry all over in a large pan in hot oil. Add the pepper strips with the sauce, put a lid on the pan and simmer until the pepper strips are cooked but still firm to the bite. Add the apricots and let them get hot. Mix the cornstarch with a little water and use it to thicken the sauce.
