Cut the onion into fine rings. Clean the peppers and cut into fine strips. Fillet 4 oranges, 4 grapefruits and 2 limes neatly. Halve and core the peeled papayas and cut into bite-sized pieces. Mix everything carefully.
Wash the mint. Puree the mint leaves with the juice of 2 limes and 2 oranges, sugar, mustard, cardamom and a pinch of cayenne pepper. Always mix in a little oil. Season the dressing with salt and pepper and add to the salad.
