Pre-cook the peeled and diced potatoes in salted water for 3-4 minutes, drain and allow to evaporate well.
Cut the bacon into pencil-wide pieces. Spread the bacon with the potatoes, 8-10 sage leaves and whole cloves of garlic on a roasting tray. Drizzle with olive oil and place in the preheated oven.
Cook for 30-35 minutes. Take out and serve immediately.
